Any higher and your passing on profitable locations...any lower and your gonna be working to hard for too little money!...and you may have a spoilage problem as well which is a double whammy! What do you mean "any higher and your passing on profitable locations"? If $20 is your minimum, then anything higher is profitable, even if its making $80. I'm going to make an educated guess and say that if a triple is making $80/month, he'd probably put a rack or something bigger in it's place. It is a very small restaurant - there is almost no room for my double. 2. Part of the reason that this machine kills so much is the young employees - they use all of their tip money to buy gumballs. Would it be better to spend money for a machine for a new location (or use one that is sitting around) rather than move a poor performer?
