What would cause repeated "handshake" errors?

Yes, Handshake refers to communication between two devices.  This could be between the logic board and a card reader, coin mech or validator.  Either a poor connection or bad device.

Yep, the telemeter and DEX files "handshake" when they are trying to upload data.  If you are still getting data then there is probably an intermittent issue with a cable or the telemeter.  I have had several similar problems lately with Nayax/InOne equipment...

I am still getting data with the error. I will check all the connections and see of I can find any bad ones. I will also let the VMS provider know and see if maybe the telemeter is causing the error. I will post a follow up. Thank you
