At what point do you guys upgrade to a larger unit?

Your service schedule should be based on your product sell through.  If your accounts are so slow that nothing ever sells out or you never have to fill any spirals full then you have lousy accounts that you need to move.   You ideally want to service the machine when you have sold about 60% of the product in the machine.  If 60% means you will have sold out spirals then you need to double up the slow movers so that you can get to a 60% sell through without more than 1 or 2 empty spirals.  If products will expire before you sell 60% then you again have slow accounts or the wrong mix of products.  Pastries, for example, have shorter shelf lives so you may need to back them up with more shelf stable items to keep product in those spirals or you'll be servicing the account more often just based on pastry sales.

When you fully stock a machine and it looks bare when you show up every service cycle, you need to increase the service cycle or get a larger machine (if possible).  That's the simple answer.  There is no reason to make a rule to service things no more than once every 2 weeks unless you have another job and lack the time.  Your service cycles should be dictated by when accounts need serviced.
