I would not do it.

dry ice is below 300 degrees.

electronics cannot work very well in that temp.

plus the parts that can work in that temp will have a lot of strain on them.

and the first time a piece breaks off and hurts someone,

your business is thiers.

The only place you could put dry ice is in the bottom of the machine and then the cold air will stay there.  Dry ice is very expensive and you would need to replace it daily or more often.  It works better in a small, tightly enclosed container to keep things frozen, not just cool.  If you need to sell snacks in a hot environment then you can get a chilled snack such as an AMS snack machine, or an older AP snack with a factory chiller in it (very hard to find), or a new Simplicool that mounts in the bottom or on the top of the snack, or a used Chill Factor cooler that mounts to the top of the machine.  The Chill Factor would be a used unit as they are no longer made and would require two holes to be cut in the top of your machine - one for air return to the chiller and one for air that is blown down the inside of the glass.  A Simplicool mounted on top would also need two holes cut for airflow.

Generally, any chiller you use will drop the internal temperature of the snack by about 20 degrees below the ambient temperature.  This is because your machine will have no insulation in it or double pane glass.  This is where a factory chilled snack machine has an advantage.  The chilled AMS and AP machines came with an insulated cabinet and the AMS had optional dual pane glass which is on quite a few of their machines.

I do have two Chill Factors in stock if you would like that option.

I've worked with dry ice before, they last only a day at best...ever think of buying a used mini fridge on Craigslist and putting the refrigerator system in it?

The guy I work with refurbishing machines (when I'm not servicing my accounts) got a batch of machines awhile back and in one of them somebody had just shoved a window air conditioner in the back - I hope it worked better than it looked

To get off-topic here, I just drove through a neighborhood on my way to a service call and saw a small SUV with all the windows covered with tin foil, parked next to a driveway with a room AC unit sitting next to it and an air duct running to one of the rear windows on the SUV.  Even though it's at a house I had to wonder if someone was living in it.

Or a grow operation!
