DEX stands for the Data Exchange Protocol adopted by NAMA years ago.  It's supposed to be a standard by which sales data can be extracted by a device which data is listed by selection and price.  Some manufacturers do it better than others and it can be difficult to extract DEX from older machines.  It can also be hard to decipher what prints out.

It can be used by telemetry devices to take inventory of the machine for pre-kitting, so you can know before you go what has sold and pack your crates with only what you will need to fill the machine.
