How do micro markets deal with the health safety requirements that cold food machines have a sensor for?

In a cold food machine if the temperature exceeds a certain limit for enough time the machine shuts down until the operator re-sets it.  I'm pretty sure the fridge door in a micro market doesn't have that feature, but perhaps I'm wrong.

You have to use a glass door cooler that has a safety interlock on it for dairy and food products.  Micro Market suppliers have them.
