Can I remove the insulation box?

I have a Vendo 630 that I am converting into a hidden safe. Is there a way to remove the insulation box or do I just have to build everything within that box?

You have to build within that box.  Otherwise you'll have to seal up the back where the compressor was anyway.  But in reality, most people build in the box, and many leave the bottom part of the condensing system in place so it still looks like a soda machine.  To truly fake someone out you'll also want to keep the door lit and the front powered up to simulate a machine that works.  Of course, then a burglar will want to buy a soda and find it doesn't work, so.......

I intend to install led lights to a switch for the front. I plan to put a piece of metal and wood over the back and cover the vend opening as well. I assumed if I could remove the box I can use a single piece on the back wall. Ideally if I can use the entire the whole area this will allow me to hang my body armor below my short rifles

Then you would need to weld over the back opening.  People sell these so maybe you could go look at a local one for sale.

The insulation between the wall of the box provides a lot of the rigidity so I'd keep that in mind.
