One other random question.  Do the machines need to sit perfectly level?  Where mine sits, it leans back just a touch.

The machines work best when they are perfectly level, but they don't need to be perfectly level.  Soda machines I think are a bit more forgiving than snack machines because the soda drops down.  As long as your drop chute is clean, the product should come out fine.  If it's leaning back way too much and/or the chute is dirty, the product might not get enough momentum to come out the delivery door.  Basically, as long as all of your products come out flawlessly, there is no issue.

You should keep it level so the moisture collected in the cabinet will drain out properly from the drain in the middle of the tank.  If it leans back that is where your water will accumulate.  The levelers are adjustable so you can get it level.
